My Favorite Paleo Recipes

I was introduced to paleo when I started Crossfit Force at the end of September 2013.

Food and eating can be an emotional thing for me. However, the exposure to paleo has been, overall, an extremely positive and healthy experience. Even when I’m eating non-paleo foods, my choices are generally much healthier than before I learned what the paleo lifestyle was about.

Now, of course you can cook simple meals like chicken and veggies, or steak and veggies – but let’s be honest, that can get boring. Because I know that if I can find meals that I love, I’m more likely to stick with paleo, I’ve have come to love Pinterest and my paleo cookbooks. I’ve even begun to expand my limited palate (If you don’t know me, you would say I’m a picky eater, if you do know me, you know it’s much more than that). Moving toward a paleo lifestyle has made me a better cook!

Starting to cook some of the paleo recipes was difficult for me because some of the ingredients sounded “weird”, but more often than not, I’ve been pleasantly surprised.

Here are my top 4 current favorite paleo recipes:

4. Paleo Fried Chicken

This is coated with seasonings and almond flour, with a little olive oil drizzled on top and then baked on a rack in the oven. Simply delicious. Went great with steamed carrots.

3. Miss Piggy Fingers and Kermit Fries

I’m getting better at my photography skills!

Aside from the better picture, this was so much better the second time! I added some seasonings (garlic powder, pepper, salt, and chili powder) to the almond flour breading. For the zucchini slices it made all the difference in the world!

This is a great dinner! Not terribly difficult to make, would be good on a week night and the pork tenderloin would make great lunch leftovers (if there’s any left!)

2. The most amazing chocolate brownies ever that you can’t even tell are paleo!

Yes, these are paleo.

I have made several paleo desserts and they all taste, well… paleo. They haven’t been terrible, but they haven’t been anywhere near non-paleo yumminess. Until I made these brownies in the picture. Oh my goodness…

I was super skeptical when I read the recipe. The main ingredient was a white sweet potato. No almond flour. Weird. But I had faith and I made them anyway. The chocolate on the top of the brownie is 82% cacao.

I honestly believe that if you served these to people and didn’t tell them the brownies were paleo, they would have no idea. They are that delicious!

1. Paleo Chili

This is by far my favorite paleo recipe so far.

I’m not sure this is the most appetizing picture, but holy paleo this chili was superb!

I got the recipe straight from Michelle of Cavegirl Cuisine.

It includes bacon and chorizo! It makes 8-10 servings. We ate it for dinner and lunch 2 days in row. And then it was all gone. That was about a week ago, and I’m already going to make it again.

This is a great weekend recipe, because it takes a bit of prep time followed by a few hours in the crockpot. But trust me, the time is worth it!
